Yes. Transcription runs entirely on your iPhone, so the app works fully offline, even in airplane mode. An internet connection is only used by free users who choose to watch a rewarded ad before exporting.
Pro is an auto-renewable subscription that gives you unlimited, watermark-free, ad-free exports. Payment is charged to your Apple Account and renews automatically unless cancelled at least 24 hours before the end of the period.
Subscriptions are handled by Apple. On your iPhone, open Settings → tap your name → Subscriptions, select Easy Captions, and manage or cancel from there.
If you reinstall the app or switch devices, open the Pro screen and tap Restore Purchases to recover your subscription on the same Apple Account.
